    Factors Affecting Implementation of the California Childhood Obesity Research Demonstration (CA-CORD) Project, 2013.

    IntroductionEcological approaches to health behavior change require effective engagement from and coordination of activities among diverse community stakeholders. We identified facilitators of and barriers to implementation experienced by project leaders and key stakeholders involved in the Imperial County, California, Childhood Obesity Research Demonstration project, a multilevel, multisector intervention to prevent and control childhood obesity.MethodsA total of 74 semistructured interviews were conducted with project leaders (n = 6) and key stakeholders (n = 68) representing multiple levels of influence in the health care, early care and education, and school sectors. Interviews, informed by the Multilevel Implementation Framework, were conducted in 2013, approximately 12 months after year-one project implementation, and were transcribed, coded, and summarized.ResultsRespondents emphasized the importance of engaging parents and of ensuring support from senior leaders of participating organizations. In schools, obtaining teacher buy-in was described as particularly important, given lower perceived compatibility of the intervention with organizational priorities. From a program planning perspective, key facilitators of implementation in all 3 sectors included taking a participatory approach to the development of program materials, gradually introducing intervention activities, and minimizing staff burden. Barriers to implementation were staff turnover, limited local control over food provided by external vendors or school district policies, and limited availability of supportive resources within the broader community.ConclusionProject leaders and stakeholders in all sectors reported similar facilitators of and barriers to implementation, suggesting the possibility for synergy in intervention planning efforts

    Genealogía y trayectoria artesanal del queso criollo en hoja de luna de Hidalgo, México

    The objective was to provide qualitative information on criollo cheese in cocoyam leaf, in order to contribute to disseminate its presence and make its valorization and its permanence as a local gastronomic heritage possible. In methodology, a structured survey was applied to 18 cheese producers, covering all the people engaged in this activity. Focused semi-structured interviews were also carried out with key persons, such as the oldest people who are still producing it today, as well as the marketers. Also utilized were the methodological tools of oral history, the genealogical method and the technological trajectory. The manufacture of this cheese was found to involve a high degree of craftsmanship, and the expertise associated with its production is the same as that was used by the ancestors of the producers, with minimal modifications in the process. It can contribute to its diffusion and valorization as a local gastronomic heritage by mentioning to the consumer that this cheese, in spite of the time, has preserved a highly artisanal character. Therefore, the peculiarities it has acquired from the physical and cultural environment are expressed in a characteristic flavor, a higher fat content, and different coloration and consistency. All of this, together with its packaging in cocoyam leaves, gives it different organoleptic characteristics from those of commercial cheeses and contributes to generate a typical cheese with attributes valued in the region where it is produced.El objetivo fue aportar información cualitativa sobre el queso criollo en hoja de luna, para contribuir a difundir su presencia y posibilitar su valorización y permanencia como acervo gastronómico local. En metodología, se aplicó una encuesta estructurada a 18 productores de queso, lo cual cubrió el universo total de personas dedicadas a esta actividad. También se realizaron entrevistas focalizadas de tipo semiestructurado con personajes clave, como las personas más antiguas que todavia lo elaboran, y los comercializadores. Además, se utilizaron las herramientas metodológicas de historia oral, método genealógico y trayectoria tecnológica. Se encontró que tiene un alto grado de artesanalidad, la técnica del saber-hacer asociado para su elaboración es la misma que utilizaban los ancestros de los productores, con mínimas modificaciones en su proceso. Se concluye, que se puede contribuir a su difusión y valorización como acervo gastronómico local, mencionando al consumidor, que este queso a pesar del tiempo ha conservado un carácter altamente artesanal; y que las peculiaridades que ha adquirido del entorno físico y cultural, se expresan en un sabor característico, mayor contenido graso, diferente coloración y consistencia; y que todo ello, junto con su envasado en la hoja de luna; le confiere características organolépticas diferentes a los quesos comerciales, y contribuye a generar un queso típico, con atributos valorados en la región en que se produce

    Climate change is among the factors of greatest interest worldwide in the social and business level, the carbon footprint is an indicator that measures the emissions of carbon dioxide (CO2) that are made in the material production chain, since obtaining raw materials until waste treatment. The ecological footprint is a real measure of the impact caused by human activities on the environment and is determined according to the amount of greenhouse gases produced. The proposal is the measure of the complete ecological footprint to consider the carbon as the base and not only CO2, as used in the tools described. The present research works on the international context and methodologies for carbon measurement and makes a comparative analysis between the carbon footprint and the ecological footprint, its scope, and differences, as well as illustrating its application in the pharmaceutical industry.El cambio climático se encuentra entre los factores de mayor interés a nivel mundial en los aspectos social y empresarial, la huella de carbono es un indicador que mide las emisiones de dióxido de carbono (CO2) que se realizan en la cadena de producción de bienes, desde la obtención de materias primas hasta el tratamiento de desperdicios. La huella ecológica es una medida real del impacto provocado por las actividades del ser humano en el medio ambiente y se determina según la cantidad de gases de efecto invernadero producidos. La propuesta es medir la huella ecológica de manera completa con la finalidad de considerar al carbono como la base y no únicamente al CO2, como es utilizado en las herramientas descritas. La presente investigación trabaja sobre el contexto internacional y metodologías para la medición del carbono, asimismo se efectúa un análisis comparativo entre la huella de carbono y la huella ecológica, sus alcances y diferencias, al igual que ilustrar su aplicación en la industria farmacéutica

    Cocoa (Theobroma cacao L.) seed proteins’ anti-obesity potential through lipase inhibition using in silico, in vitro and in vivo models

    This article belongs to the Special Issue Proteins and Bioactive Peptides in High Protein Content Foods.The aim of this study was to determine the pancreatic lipase (PL) inhibitory effect of cocoa protein (CP) hydrolysates (CPH) using in silico and in vitro approaches, and an in vivo high-fat diet (HF) obese rat model. The results showed better theoretical affinity on PL for cocoa peptides EEQR, GGER, QTGVQ, and VSTDVNIE released from vicilin and albumins (−6.5, −6.3, −6.2, and −6.1 kcal/mol, respectively). Absorption, distribution, metabolism, and excretion (ADMET) prediction showed the human intestinal absorption (HIA) capacity of orlistat and eight cocoa peptides, demonstrating that they presented a low probability of toxicity with values lower than 0.6, while the orlistat has a high probability of hepatotoxicity with a mean value of 0.9. CPH (degree of hydrolysis of 55%) inhibited PL with an IC50 (concentration needed to inhibit 50% of enzyme activity) value of 1.38 mg/mL. The intragastric administration of 150 mg CP/kg/day to rats increased total lipids and triglycerides excretion in feces, ranging from 11% to 15% compared to the HF-diet. The HF + CP-diet also significantly decreased (p < 0.05) the apparent rate of fat absorption compared with the HF group.
